Preheat oven to 400°F. Place pie crust in 9-inch pie pan, trim and crimp edges. Line with parchment paper or foil and fill with dried beans, rice or pie weights.

Bake crust for 10-12 minutes until edges turn pale. Remove weights and paper, continue baking 5-7 minutes until bottom and sides are pale.

Place bacon, cheese and spinach in partially baked crust and set aside.

Whisk eggs and half and half until pale yellow. Season with salt and pepper, then pour over filling.

Reduce oven to 375°F. Bake quiche for 35-45 minutes, until center is set and no longer jiggly.

Let sit for a few minutes before slicing. Optionally top with hot sauce, sour cream or hollandaise sauce.
