Baked Zucchini with Gouda (Print Version)

# Ingredients:

01 - 2 medium zucchinis, sliced into ½-inch rounds
02 - 2 medium tomatoes, sliced into ½-inch rounds
03 - 1 cup Gouda cheese, shredded or sliced
04 - 2 tablespoons olive oil
05 - 2 cloves garlic, minced
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried basil
08 - ½ teaspoon salt
09 - ½ teaspoon black pepper
10 - ¼ cup grated Parmesan cheese
11 - 1 tablespoon chopped fresh parsley

# Instructions:

01 - Set your oven to 375°F (190°C).
02 - Wash and slice the zucchinis and tomatoes into even ½-inch rounds.
03 - In a mixing bowl, toss the zucchini slices with olive oil, garlic, oregano, basil, salt, and pepper.
04 - Arrange the zucchini slices in a single layer in a greased baking dish. Place a slice of Gouda cheese on top of each zucchini slice, then top with a tomato slice.
05 - Sprinkle the top with grated Parmesan (if using) and a bit more black pepper.
06 - Bake uncovered for 20–25 minutes or until the cheese is melted and bubbly.
07 - Remove from the oven, sprinkle with fresh parsley, and serve warm.
