Set your oven to 375°F (190°C).

Wash and slice the zucchinis and tomatoes into even ½-inch rounds.

In a mixing bowl, toss the zucchini slices with olive oil, garlic, oregano, basil, salt, and pepper.

Arrange the zucchini slices in a single layer in a greased baking dish. Place a slice of Gouda cheese on top of each zucchini slice, then top with a tomato slice.

Sprinkle the top with grated Parmesan (if using) and a bit more black pepper.

Bake uncovered for 20–25 minutes or until the cheese is melted and bubbly.

Remove from the oven, sprinkle with fresh parsley, and serve warm.
