Bubble and Squeak with Sausages (Print Version)

# Ingredients:

01 - 2 cups cooked cabbage, finely chopped
02 - 2 cups mashed potatoes
03 - 1/2 cup diced onions
04 - 1/2 cup diced cooked carrots
05 - 4 slices of bacon, chopped
06 - 4 breakfast sausages
07 - 2 tablespoons butter or oil
08 - 4 eggs
09 - Salt and pepper, to taste
10 - Fresh parsley, for garnish

# Instructions:

01 - In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside.
02 - In the same skillet, add sausages and cook until browned and cooked through. Remove and set aside.
03 - Add butter or oil to the skillet. Stir in diced onions and cook until translucent.
04 - Mix in chopped cabbage, mashed potatoes, carrots, and cooked bacon. Season with salt and pepper.
05 - Press mixture down with a spatula and let it cook undisturbed for 5-7 minutes until crispy on the bottom. Flip sections and repeat until browned all over.
06 - In a separate pan, fry eggs to desired doneness.
07 - Plate the bubble and squeak mixture, top with sausages and fried eggs. Garnish with fresh parsley and serve hot.
