In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside.

In the same skillet, add sausages and cook until browned and cooked through. Remove and set aside.

Add butter or oil to the skillet. Stir in diced onions and cook until translucent.

Mix in chopped cabbage, mashed potatoes, carrots, and cooked bacon. Season with salt and pepper.

Press mixture down with a spatula and let it cook undisturbed for 5-7 minutes until crispy on the bottom. Flip sections and repeat until browned all over.

In a separate pan, fry eggs to desired doneness.

Plate the bubble and squeak mixture, top with sausages and fried eggs. Garnish with fresh parsley and serve hot.
