Easy Cabbage Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 pound ground beef.
03 - 1 onion, chopped.
04 - 2 garlic cloves, minced.
05 - 15 oz diced tomatoes.
06 - 6 oz tomato paste.
07 - 4 cups beef broth.
08 - 1 cup water.
09 - 1 cup cooked rice.
10 - 2 cups cabbage, chopped.
11 - 1 teaspoon dried basil.
12 - 1 teaspoon dried thyme.
13 - 1/2 teaspoon smoked paprika.
14 - 1 tablespoon brown sugar (optional).
15 - Salt and pepper to taste.
16 - Fresh parsley for garnish.

# Instructions:

01 - Heat oil in large pot. Cook beef 5-7 minutes until done.
02 - Add onion and garlic. Cook 3-4 minutes until soft.
03 - Add tomatoes, paste, broth, water. Stir in rice, cabbage, all seasonings. Bring to boil.
04 - Reduce heat to low. Cook 30-40 minutes. Until cabbage is tender.
05 - Add brown sugar if desired. Adjust seasoning. Garnish with parsley.

# Notes:

01 - Can use any ground meat.
02 - Freezes well without rice.
03 - Better next day.
04 - Add chili flakes for heat.
05 - Store rice separately for leftovers.
06 - Great winter meal.
