Crunchy Ukrainian-Inspired Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 1 lb (about 5 large) carrots, peeled and sliced into matchsticks
02 - 2 granny smith apples, peeled, cored and sliced into matchsticks
03 - 1 cup walnuts, coarsely chopped
04 - 1/2 cup raisins

→ Dressing

05 - 3 Tbsp lemon juice (juice of 1 medium lemon), divided
06 - 3 Tbsp sunflower oil
07 - 1/2 tsp salt
08 - 1/8 tsp black pepper, or to taste

# Instructions:

01 - Toast walnuts on a dry skillet until golden then remove from heat to cool (keep an eye on them; they can burn quickly).
02 - Soak raisins in 1 cup boiling hot water for about 1 minute to soften them up. Drain well and set aside.
03 - Cut carrots into matchsticks and place them in a large mixing bowl.
04 - Cut apples into matchsticks and toss them with 1 Tbsp lemon juice right away to prevent browning.
05 - Add soaked raisins and toasted walnuts to the bowl with carrots and apples.
06 - In a small bowl or measuring cup, combine 2 Tbsp lemon juice, 3 Tbsp sunflower oil, 1/2 tsp salt and 1/8 tsp black pepper.
07 - Pour the dressing over salad and stir until combined.

# Notes:

01 - Use unrefined sunflower oil for best flavor
02 - Stores well in refrigerator for several hours
03 - Can be prepared a day ahead
