# Ingredients:

01 - 1 1/2 cups grated carrots
02 - 1 1/4 cups whole wheat flour
03 - 1/2 teaspoon baking soda
04 - 1 teaspoon cinnamon

06 - 1/4 cup maple syrup
07 - 1/4 cup applesauce
08 - 1/4 cup almond milk (or any non-dairy milk)
09 - 1 teaspoon vanilla extract
10 - 1/4 cup chopped walnuts

11 - 1/4 cup coconut cream
12 - 1 tablespoon maple syrup
13 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
02 - In a large mixing bowl, combine the grated carrots, whole wheat flour, baking soda, cinnamon, and salt.
03 - In a separate bowl, mix the maple syrup, applesauce, almond milk, and vanilla extract.
04 - Pour the wet ingredients into the dry ingredients and stir until well combined.
05 - Fold in the chopped walnuts (if using).
06 - Pour the batter into the prepared baking pan and spread it out evenly.
