Easy Chicken Fajita Rice Skillet (Print Version)

# Ingredients:

→ Base

01 - 3/4 cups uncooked rice (Jasmine preferred)
02 - 2 cups cooked grilled chicken breast, cut into strips

→ Vegetables

03 - 1 red bell pepper, sliced
04 - 1 green bell pepper, sliced
05 - 1 medium onion, sliced

→ Sauce & Seasonings

06 - 1 teaspoon olive oil
07 - 8 oz tomato sauce
08 - 1 1/4 cup chicken broth
09 - 1 package fajita seasoning mix
10 - 1 lime, juiced
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon black pepper

→ Optional Toppings

13 - Sour cream
14 - Pico de gallo
15 - Avocado slices
16 - Lime wedges
17 - Shredded cheese
18 - Chopped cilantro

# Instructions:

01 - Heat oil in heavy bottomed skillet over medium-high heat. Add peppers and onions, cook until charred and blistered.
02 - Add rice, tomato sauce, chicken broth, fajita seasoning, lime juice, chicken, salt and pepper. Stir and scrape browned bits. Bring to boil.
03 - Reduce heat, cover and cook 16-18 minutes until rice is tender.
04 - Fluff rice and serve with optional toppings.

# Notes:

01 - Can make homemade fajita seasoning with provided spice blend
