Quick Cilantro Chicken Stir Fry (Print Version)

# Ingredients:

→ Protein

01 - 1 pound boneless skinless chicken thighs, cut into bite size pieces

→ Vegetables & Herbs

02 - 1 red bell pepper, chopped
03 - 4 cloves garlic, minced
04 - 2 teaspoons minced fresh ginger
05 - 1/4 cup green onions, sliced
06 - 1 cup freshly chopped cilantro

→ Sauce

07 - 1 tablespoon soy sauce
08 - 2 teaspoons rice vinegar
09 - 1 teaspoon Sriracha sauce
10 - 1 teaspoon sesame oil
11 - 1 teaspoon corn starch

→ Other

12 - 2 teaspoons peanut oil
13 - 1/4 cup honey-roasted peanuts
14 - Hot cooked rice and lime wedges for serving

# Instructions:

01 - Heat peanut oil in large skillet or wok over medium-high heat. Add chicken and stir, cooking for 2 minutes.
02 - Add peanuts, bell pepper, garlic and ginger. Cook 3-4 minutes until chicken is cooked through.
03 - Combine soy sauce, rice vinegar, Sriracha, sesame oil and cornstarch in small dish. Add sauce and green onions to skillet, cook until thickened.
04 - Remove from heat, stir in cilantro. Serve over rice with lime wedges.
