Creamy Spinach Tortellini Shrimp (Print Version)

# Ingredients:

01 - 1 lb shrimp, peeled and deveined
02 - 9 oz cheese tortellini, fresh or refrigerated
03 - 1 tbsp olive oil
04 - 2 tsp Cajun or blackened seasoning
05 - 2 cups fresh spinach, chopped
06 - 1 tbsp butter
07 - 3 cloves garlic, minced
08 - 1 cup heavy cream
09 - 1/2 cup grated Parmesan cheese
10 - Salt and black pepper, to taste

# Instructions:

01 - Cook the tortellini according to package directions. Drain and set aside.
02 - Toss shrimp in Cajun or blackened seasoning. Heat olive oil in a skillet over medium-high and sear shrimp for 2 to 3 minutes per side until golden. Remove and set aside.
03 - In the same skillet, melt butter. Sauté garlic for 1 minute, then add the cream and bring to a gentle simmer.
04 - Stir in spinach and cook until wilted. Add Parmesan, stir until smooth, then season with salt and pepper.
05 - Add cooked tortellini and toss to coat in the sauce. Top with blackened shrimp and serve hot.
