Cozy One-Pot Italian Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tbsp olive oil
02 - 1 medium red bell pepper, diced
03 - ½ medium onion, diced
04 - 1 lb ground hot sausage
05 - 1 tsp garlic, minced

→ Soup

06 - 32 oz low sodium chicken broth
07 - 15 oz jarred alfredo sauce
08 - ½ tsp Italian seasoning
09 - ¼ tsp black pepper

→ Add-Ins

10 - 9 oz refrigerated cheese filled tortellini
11 - 5 oz baby spinach leaves
12 - parmesan cheese for topping (optional)

# Instructions:

01 - Heat a large dutch oven or pot over medium-high heat. Add in the olive oil and cook the bell pepper, onion and sausage until the sausage is browned and no longer pink. Stir in the garlic and cook until fragrant, about 30 seconds.
02 - Add in the chicken broth and jarred Alfredo sauce, as well as the italian seasoning and pepper. Bring mixture to a boil.
03 - Add in the cheese filled tortellini. Reduce the heat to a simmer and cook for 7 to 9 minutes, stirring occasionally until the tortellini is tender.
04 - Stir in the spinach, cooking for 1 to 2 minutes, until the spinach is wilted. Spoon the soup into bowls and garnish with freshly grated parmesan cheese if desired. Enjoy!

# Notes:

01 - Can substitute sausage with shredded chicken
02 - Use fresh tortellini for best results
03 - Add more broth if soup becomes too thick
