Season the chicken all over with salt, pepper, and 1/4 tsp garlic powder. Let rest at room temperature while prepping other ingredients.

Thinly slice the bell peppers and onions. Set aside.

Heat 1 tablespoon oil in a large skillet over medium heat. Cook chicken 3-4 minutes per side until done. Move to a cutting board and cover with foil.

Add remaining oil to skillet. Add peppers, onions, remaining garlic powder, Italian seasoning, salt and pepper. Cook on medium-high until tender and lightly charred, 6-8 minutes.

Slice chicken into strips and mix with vegetables. Split mixture into two piles, top with cheese until melted. Warm rolls and fill with the chicken mixture. Serve hot!
