Quick Hot Cheesy Sandwich (Print Version)

# Ingredients:

→ Proteins & Dairy

01 - 8 oz boneless chicken breasts or thighs, trimmed of excess fat
02 - 4 slices provolone cheese

→ Produce

03 - 1/2 medium red bell pepper
04 - 1/2 medium green bell pepper
05 - 1/2 large onion

→ Pantry & Oils

06 - 2 tablespoons avocado oil, divided
07 - 2 sausage rolls

→ Seasonings

08 - 1/2 teaspoon garlic powder
09 - 1 teaspoon Italian seasoning
10 - Salt and black pepper to taste

# Instructions:

01 - Season the chicken all over with salt, pepper, and 1/4 tsp garlic powder. Let rest at room temperature while prepping other ingredients.
02 - Thinly slice the bell peppers and onions. Set aside.
03 - Heat 1 tablespoon oil in a large skillet over medium heat. Cook chicken 3-4 minutes per side until done. Move to a cutting board and cover with foil.
04 - Add remaining oil to skillet. Add peppers, onions, remaining garlic powder, Italian seasoning, salt and pepper. Cook on medium-high until tender and lightly charred, 6-8 minutes.
05 - Slice chicken into strips and mix with vegetables. Split mixture into two piles, top with cheese until melted. Warm rolls and fill with the chicken mixture. Serve hot!

# Notes:

01 - You can substitute avocado oil with vegetable, canola, or olive oil
02 - Yellow or white onion both work great in this recipe
03 - Try Cheese Whiz or White American cheese as alternatives to provolone
04 - Artesano, Amoroso rolls, deli subs, or hoagies all work well for the bread
