Easy Roast Turkey (Print Version)

# Ingredients:

01 - 1 Whole Turkey, thawed (any size).
02 - 4 tablespoon softened unsalted butter.
03 - 4 tablespoons olive oil.
04 - Salt.
05 - 1 lemon.
06 - 1 whole head garlic.
07 - 1 ounce mix of fresh rosemary, sage, and/or thyme.

# Instructions:

01 - Remove turkey from fridge and packaging 1 hour before cooking. Remove giblets and pat dry with paper towels.
02 - Adjust racks to lower third of oven and preheat to 325°F.
03 - Mix softened butter and olive oil in small bowl until mostly combined.
04 - Quarter lemon, halve garlic head crosswise. Stuff cavity with herbs, lemon, and garlic without overstuffing.
05 - Place turkey on roasting rack breast up. Tuck wings behind back.
06 - Rub butter mixture all over turkey, especially breast area. Sprinkle generously with salt.
07 - Cook about 16 minutes per pound until breast reaches 165°F.
08 - Let turkey rest 30 minutes before carving.

# Notes:

01 - Bring turkey to room temperature before cooking.
02 - Don't overstuff cavity with aromatics.
03 - Tie legs together if needed.
04 - Temperature is more reliable than cooking time.
