Remove turkey from fridge and packaging 1 hour before cooking. Remove giblets and pat dry with paper towels.

Adjust racks to lower third of oven and preheat to 325°F.

Mix softened butter and olive oil in small bowl until mostly combined.

Quarter lemon, halve garlic head crosswise. Stuff cavity with herbs, lemon, and garlic without overstuffing.

Place turkey on roasting rack breast up. Tuck wings behind back.

Rub butter mixture all over turkey, especially breast area. Sprinkle generously with salt.

Cook about 16 minutes per pound until breast reaches 165°F.

Let turkey rest 30 minutes before carving.
