Greek Chicken Gyros Tzatziki (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 680g skinless chicken thighs or fillets
02 - 60ml olive oil
03 - Juice of 1 lemon
04 - 3 cloves garlic, minced
05 - 2 tsp dried oregano
06 - 1 tsp paprika
07 - 1/2 tsp ground cumin
08 - Salt and black pepper to taste

→ Cucumber Tzatziki

09 - 250ml plain Greek yogurt
10 - 1/2 cucumber, grated and drained
11 - 1 clove garlic, minced
12 - 1 tbsp fresh dill, chopped
13 - 1 tbsp lemon juice
14 - 1 tbsp olive oil
15 - Salt and black pepper to taste

→ Assembly

16 - 4-6 pita breads, warmed
17 - 1 cup cherry tomatoes, halved
18 - 1 cup shredded lettuce
19 - 1/2 red onion, thinly sliced
20 - 50g crumbled feta cheese (optional)

# Instructions:

01 - In a large bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and coat well. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
02 - In a bowl, mix together Greek yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper. Refrigerate for at least 20 minutes to allow flavors to develop.
03 - Heat a large skillet or grill over medium-high heat. Cook marinated chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Let rest for 5 minutes, then cut into strips.
04 - Spread a generous amount of tzatziki onto each warm pita. Top with sliced chicken, cherry tomatoes, shredded lettuce, red onion, and feta, if desired.
