Mediterranean Orzo Salad (Print Version)

# Ingredients:

01 - 1 cup orzo pasta.
02 - 2 chicken breasts.
03 - 1 teaspoon dried oregano.
04 - 1 teaspoon dried thyme.
05 - 2 tablespoons olive oil.
06 - Salt and pepper to taste.
07 - 1 cup cherry tomatoes, halved.
08 - 1/2 English cucumber, diced.
09 - 1/4 red onion, sliced.
10 - 1/2 cup Kalamata olives, halved.
11 - 1/4 cup feta cheese, crumbled.
12 - 2 tablespoons lemon juice.
13 - 2 tablespoons fresh parsley.
14 - 1 tablespoon fresh dill.
15 - 1 garlic clove, minced.
16 - 1/4 cup olive oil.

# Instructions:

01 - Boil orzo according to package. Drain and cool.
02 - Season with herbs and spices. Heat oil in skillet. Cook 6-7 minutes per side. Rest before slicing.
03 - Combine orzo, chicken. Add all vegetables. Mix in olives and feta.
04 - Whisk lemon juice, herbs, garlic. Stream in olive oil. Season to taste.
