Season the pork chops with salt, pepper, and dried thyme.

Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, add minced garlic and cook for 1-2 minutes, until fragrant. Add honey and soy sauce, stirring until the sauce thickens, about 3-4 minutes.

Return the pork chops to the skillet, coating them in the sauce. Cook for an additional 1-2 minutes to heat the pork chops through. Serve with the honey garlic sauce drizzled on top.
