# Ingredients:

03 - ¼ tsp salt
04 - ½ cup unsalted butter, softened
05 - ½ cup granulated sugar
06 - ½ cup brown sugar, packed
07 - 1 large egg
08 - 1 tsp vanilla extract
09 - ½ tsp almond extract (optional)
10 - ¾ cup dried cherries, chopped
11 - ¾ cup shelled pistachios, roughly chopped
12 - White chocolate chips or drizzle (optional for topping)

# Instructions:

01 - Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
02 - In a bowl, whisk together flour, baking soda, and salt.
03 - In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
04 - Mix in the egg, vanilla, and almond extract until well combined.
05 - Gradually add dry ingredients into the wet mixture. Fold in chopped cherries and pistachios until evenly distributed.
06 - Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10–12 minutes, or until edges are lightly golden.
07 - Let cookies cool on the sheet for 5 minutes before transferring to a wire rack. Drizzle with white chocolate if desired.
