Italian Seafood Salad Dish (Print Version)

# Ingredients:

→ Seafood

01 - 1.5 pounds octopus, boiled until tender
02 - 8 large shrimp, peeled and deveined
03 - 4 squid tubes, sliced into rings

→ Vegetables

04 - 1 rib celery, chopped
05 - 2 red onions, chopped

→ Aromatics

06 - 2 bay leaves
07 - 3 cloves garlic, minced

→ Citrus

08 - 2 lemons, for poaching and dressing
09 - 3 tangerines, for dressing

→ Dressing

10 - 1/4 cup olive oil
11 - 2 teaspoons honey Dijon mustard
12 - 1/4 cup fresh parsley, chopped
13 - Salt to taste
14 - Pepper to taste

# Instructions:

01 - Boil octopus until tender, then slice it. In the same pot, poach shrimp and squid with bay leaves and a squeeze of lemon. Drain and allow to cool.
02 - Whisk together olive oil, lemon juice, tangerine juice, honey Dijon mustard, minced garlic, salt, and pepper.
03 - Combine the seafood, celery, and fresh parsley in a bowl. Toss with the prepared dressing.
04 - Let the salad chill for 30 minutes to allow the flavors to meld before serving.
