Leftover Mashed Potato Cakes (Print Version)

# Ingredients:

01 - 2 cups mashed potatoes.
02 - 1 egg.
03 - 1/2 cup shredded cheddar cheese.
04 - 1/4 cup all purpose flour.
05 - 1 tablespoon fresh parsley, chopped.
06 - 1/2 cup plain breadcrumbs.
07 - 3-4 tablespoons olive oil.

# Instructions:

01 - Combine mashed potatoes, egg, cheese, flour, and parsley in mixing bowl.
02 - Scoop 1/4 cup portions, form into balls, then coat with breadcrumbs and shape into cakes.
03 - Heat 2 tablespoons oil in large skillet over medium heat until shimmering.
04 - Cook cakes in batches 3-4 minutes per side until golden brown, adding oil between batches if needed.
05 - Drain on paper towels and serve with sour cream or favorite sauce.

# Notes:

01 - Do not use instant mashed potatoes.
02 - Can use different cheese and breadcrumb varieties.
03 - Add flour gradually if mixture is too wet.
04 - Assumes mashed potatoes are already seasoned with salt.
