Lemon Herb Chicken Dish (Print Version)

# Ingredients:

→ Chicken

01 - 2 boneless skinless chicken breasts
02 - 1 tbsp olive oil
03 - Juice of 1/2 lemon
04 - 1/2 tsp garlic powder
05 - Salt and pepper to taste
06 - Fresh chives for garnish

→ Potatoes

07 - 3–4 small Yukon gold potatoes, thinly sliced
08 - 1 tbsp olive oil
09 - Salt and pepper to taste

→ Broccoli

10 - 2 cups broccoli florets
11 - 1 tbsp olive oil
12 - Salt and pepper to taste

→ Optional Herb Sauce

13 - 1/2 cup Greek yogurt or sour cream
14 - 1 tbsp lemon juice
15 - 1 tbsp chopped fresh parsley or chives
16 - Salt and pepper to taste

# Instructions:

01 - Preheat oven to 220°C (425°F). Toss sliced potatoes and broccoli separately with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
02 - Season chicken breasts with garlic powder, salt, pepper, and lemon juice. Heat olive oil in a skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and cooked through.
03 - In a small bowl, mix Greek yogurt, lemon juice, chopped herbs, salt, and pepper until smooth.
04 - Serve chicken breast with roasted potatoes and broccoli. Drizzle with optional herb sauce.
05 - Sprinkle chopped chives on top and serve warm.
