Lime Bars for Healthy Snacking (Print Version)

01 - 1 cup (240 ml) pitted Medjool dates
02 - 1 cup (100 g) unsweetened shredded coconut
03 - ½ cup (40 g) almond flour
04 - ¼ cup (60 ml) fresh key lime juice
05 - 2 tablespoons (30 ml) coconut oil, melted
06 - 1 teaspoon key lime zest

# Instructions:

01 - Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang on the sides.
02 - In a food processor, combine the pitted dates and pulse until a sticky paste forms.
03 - Add the shredded coconut, almond flour, key lime juice, melted coconut oil, and key lime zest to the food processor.
04 - Process until the mixture is well combined and sticks together.
05 - Transfer the mixture to the prepared baking pan and press it down firmly into an even layer.
06 - Cover the pan and refrigerate for at least 2 hours to allow the bars to firm up.
07 - Once chilled, lift the bars out of the pan using the parchment paper overhang. Cut into desired sized bars and enjoy! Store in an airtight container in the refrigerator.
