Chicken Marsala Pasta (Print Version)

# Ingredients:

01 - 1 pound fettuccine.
02 - 1 pound chicken thighs.
03 - 10 ounces cremini mushrooms, sliced.
04 - 1 red onion, sliced.
05 - 2 garlic cloves, minced.
06 - 3 tablespoons butter, divided.
07 - 2 tablespoons olive oil.
08 - 1/3 cup all-purpose flour.
09 - 1 cup Marsala wine.
10 - 1 cup chicken broth.
11 - 1/4 cup heavy cream.
12 - 1/4 cup sour cream.
13 - 1/2 cup Parmesan cheese, grated.
14 - 1/4 cup fresh parsley.
15 - Salt and pepper to taste.

# Instructions:

01 - Boil salted water. Cook fettuccine. Reserve 1 cup pasta water.
02 - Season with salt and pepper. Sear 2 minutes per side. Set aside, then chop.
03 - Caramelize onions (20 min). Add mushrooms, garlic. Cook until golden.
04 - Add flour, cook briefly. Add wine, simmer 1 minute. Add broth and cream. Add chicken. Simmer 10 minutes.
05 - Stir in sour cream. Add pasta. Mix in Parmesan. Add pasta water if needed. Garnish with parsley.
