Mediterranean Ground Beef Stir Fry (Print Version)

# Ingredients:

01 - 1 lb lean ground beef
02 - 1 red bell pepper, chopped
03 - 1 yellow bell pepper, chopped
04 - 1 small red onion, diced
05 - 2 cloves garlic, minced
06 - 2 tablespoons olive oil
07 - 1 teaspoon ground cumin
08 - 1 teaspoon smoked paprika
09 - ½ teaspoon ground coriander
10 - Salt to taste
11 - Black pepper to taste
12 - ½ teaspoon dried oregano or Italian seasoning
13 - Juice of ½ lemon
14 - Fresh parsley, chopped (for garnish)
15 - Sesame seeds, optional (for garnish)

# Instructions:

01 - Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
02 - In the same skillet, add olive oil. Toss in the diced onion and minced garlic, and sauté until fragrant (about 1-2 minutes). Add the chopped red and yellow bell peppers and cook until slightly tender but still crisp (about 3-4 minutes).
03 - Add the cooked ground beef back into the skillet. Sprinkle in the cumin, paprika, coriander, oregano, salt, and pepper. Stir everything together until well combined and the beef is coated with the spices.
04 - Squeeze the lemon juice over the stir fry to add a fresh zing. Garnish with chopped parsley and sesame seeds if desired.
05 - Serve the stir fry warm over rice, quinoa, or alongside pita bread. Alternatively, use it as a filling for wraps or stuff it into bell peppers.
