Mediterranean Salmon Patties Lemon (Print Version)

# Ingredients:

→ For the Patties

01 - 12 oz salmon, drained and flaked
02 - 1 cup fresh spinach, finely chopped
03 - ¼ cup red onion, finely chopped
04 - 2 cloves garlic, minced
05 - ⅓ cup crumbled feta cheese
06 - 1 egg
07 - ½ cup breadcrumbs
08 - 1 tablespoon chopped fresh parsley
09 - 1 teaspoon dried oregano
10 - Zest of 1 lemon
11 - Salt to taste
12 - Black pepper to taste
13 - 2 tablespoons olive oil, for frying

→ For the Lemon Yogurt Dressing

14 - ½ cup plain Greek yogurt
15 - 1 tablespoon lemon juice
16 - 1 teaspoon lemon zest
17 - 1 tablespoon olive oil
18 - Salt to taste
19 - Black pepper to taste
20 - 1 teaspoon chopped fresh dill or parsley (optional)

# Instructions:

01 - In a large bowl, combine salmon, spinach, red onion, garlic, feta cheese, egg, breadcrumbs, parsley, oregano, lemon zest, salt, and pepper. Mix until well combined. Shape into small patties, about 6-8.
02 - Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes per side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
03 - In a small bowl, whisk together Greek yogurt, lemon juice, lemon zest, olive oil, salt, pepper, and herbs until smooth and creamy.
04 - Serve the patties warm with a generous dollop of lemon yogurt dressing and a side of fresh cucumber-tomato salad or warm pita bread.
