No-Bake Mini Banana Pies (Print Version)

# Ingredients:

→ For the Crust

01 - 1 ½ cups crushed graham crackers or digestive biscuits
02 - ¼ cup melted butter
03 - 2 tablespoons sugar

→ For the Filling

04 - 1 (3.4 oz) box instant banana pudding mix
05 - 1 ¼ cups cold milk
06 - 1 cup heavy whipping cream
07 - 2 tablespoons powdered sugar
08 - 1 teaspoon vanilla extract
09 - 2 ripe bananas, sliced

→ For the Topping

10 - ½ cup heavy whipping cream
11 - 1 tablespoon powdered sugar
12 - Extra banana slices for garnish
13 - Crushed graham crackers for garnish

# Instructions:

01 - Mix the crushed graham crackers, melted butter, and sugar in a bowl until combined. Press the mixture firmly into mini cupcake liners or tart molds to form crusts. Chill in the refrigerator for at least 20 minutes.
02 - Whisk together the banana pudding mix and cold milk in a bowl until thickened, about 2 minutes. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold the whipped cream into the banana pudding.
03 - Place a few banana slices over each crust. Spoon or pipe the banana pudding mixture over the banana slices. Smooth the tops and chill for at least 1 hour to set.
04 - Whip the remaining heavy cream and powdered sugar until stiff peaks form. Pipe or spoon onto each mini pie.
05 - Top with banana slices and a sprinkle of crushed graham crackers before serving.
