Orange Mascarpone Chocolate Ganache (Print Version)

# Ingredients:

→ Cheesecake

01 - 1 1/2 cups graham cracker crumbs
02 - 1/4 cup unsalted butter, melted
03 - 16 oz mascarpone cheese, softened
04 - 1 cup sugar
05 - 3 large eggs
06 - 1/4 cup fresh orange juice
07 - 1 tbsp orange zest
08 - 1/2 cup sour cream
09 - 1 tsp vanilla extract

→ Chocolate Ganache

10 - 1 cup heavy cream
11 - 1 cup semi-sweet chocolate chips

# Instructions:

01 - Preheat oven to 325°F (160°C). Grease and line a springform pan.
02 - Mix graham cracker crumbs and melted butter, then press into the pan to form the crust.
03 - Beat mascarpone cheese and sugar until smooth. Add eggs one at a time, then mix in orange juice, zest, sour cream, and vanilla.
04 - Pour the mixture into the crust and bake for 50-60 minutes, until set but slightly jiggly in the center. Let cool and refrigerate for at least 4 hours.
05 - Heat heavy cream in a small pot until simmering, then pour it over the chocolate chips. Stir until smooth.
06 - Pour the ganache over the chilled cheesecake, spreading evenly. Let set before serving.
