Pan-Seared Salmon & Herb Potatoes (Print Version)

# Ingredients:

→ Main

01 - 1 salmon fillet (150g)
02 - 1/2 tbsp olive oil
03 - 1/2 tsp salt
04 - 1/4 tsp black pepper
05 - 1/2 tsp garlic powder
06 - 1/2 tsp paprika
07 - 1/2 tbsp lemon juice

→ Side: Herb Potatoes

08 - 2 medium potatoes, peeled and cubed
09 - 1/2 tbsp butter or olive oil
10 - 1/2 tsp salt
11 - 1/4 tsp black pepper
12 - 1 tbsp fresh parsley, chopped

→ Salad

13 - 1 cup fresh lamb’s lettuce or spinach
14 - 1/2 tbsp lemon juice or balsamic vinegar
15 - Pinch of salt
16 - Pinch of black pepper

# Instructions:

01 - Boil potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, salt, black pepper, and fresh parsley.
02 - Heat olive oil in a nonstick pan over medium-high heat. Season salmon with salt, pepper, garlic powder, and paprika. Cook skin-side down for 4 minutes, then flip and cook for another 3-4 minutes until golden brown. Drizzle with fresh lemon juice before serving.
03 - In a bowl, toss lamb’s lettuce with olive oil, lemon juice, salt, and pepper.
04 - Plate the salmon with the herb potatoes and fresh salad. Serve warm and enjoy.
