Easy Pizza Quinoa Bake (Print Version)

# Ingredients:

→ Base & Proteins

01 - 1 cup dry quinoa
02 - 2 cups chicken broth
03 - 2 oz cooked Italian sausage
04 - 1 oz pepperoni slices
05 - 1 egg (or 2 egg whites)

→ Cheese & Produce

06 - 1/2 cup plus 1/3 cup shredded mozzarella
07 - 1/2 cup tomato sauce
08 - 1/2 green bell pepper, diced
09 - 2 tablespoons sliced black olives

→ Seasonings

10 - 1/2 tablespoon Italian seasoning
11 - Salt and pepper to taste

# Instructions:

01 - Preheat oven to 375 degrees and cook quinoa according to package directions.
02 - Once quinoa is ready, in same pot add in tomato sauce, cooked sausage, 1/3 cup shredded cheese, diced bell pepper, Italian seasoning, egg and half of the pepperoni slices (sliced in half). Mix thoroughly.
03 - Add to a prepared 9x9 casserole dish using a spatula to pack your mixture down evenly. Top with remaining olives, pepperoni and 1/2 cup mozzarella cheese
04 - Bake at 375 degrees for 30 minutes
