Broccoli Cheddar Soup (Print Version)

# Ingredients:

01 - 4 medium potatoes, diced.
02 - 3 cups broccoli florets.
03 - 1 medium onion, chopped.
04 - 3 garlic cloves, minced.
05 - 4 cups vegetable broth.
06 - 1 cup cheddar cheese, shredded.
07 - 1 cup heavy cream.
08 - 1 teaspoon salt.
09 - 1/2 teaspoon black pepper.
10 - 1/2 teaspoon paprika.
11 - Optional toppings: Extra cheese, Croutons, Green onions, Bacon bits.

# Instructions:

01 - Add potatoes, broccoli, onion, garlic. Pour in broth. Add salt, pepper, paprika. Stir well.
02 - Low: 6-8 hours. High: 3-4 hours. Until potatoes are tender.
03 - Use immersion blender. Blend to desired consistency. Can leave some chunks.
04 - Stir in cream. Add cheese until melted. Top as desired and serve.
