Red Beans and Rice (Print Version)

# Ingredients:

01 - 1 pound dried red kidney beans.
02 - 1 pound smoked sausage, sliced.
03 - 1 onion, chopped.
04 - 1 green bell pepper, chopped.
05 - 2 celery stalks, chopped.
06 - 3 garlic cloves, minced.
07 - 2 bay leaves.
08 - 1 teaspoon dried thyme.
09 - 1 teaspoon dried oregano.
10 - 1/2 teaspoon cayenne pepper.
11 - Salt and black pepper to taste.
12 - Cooked white rice (for serving).
13 - Green onions, chopped (for garnish).

# Instructions:

01 - Rinse and sort beans. Soak overnight. Drain and rinse again.
02 - Brown sausage in a Dutch oven. Remove excess fat.
03 - Add trinity (onion, pepper, celery). Cook for 5-7 minutes. Add garlic and spices.
04 - Add beans and water. Bring to a boil. Reduce heat and cook for 1.5-2 hours.
05 - Mash some beans to thicken. Season to taste. Serve over rice and garnish with green onions.
