Shrimp Alfredo (Print Version)

# Ingredients:

01 - 12 oz. fettuccine.
02 - 2 tablespoons olive oil.
03 - 12 tablespoons salted butter.
04 - 1 lb. jumbo shrimp, peeled and deveined.
05 - Kosher salt, to taste.
06 - Black pepper, to taste.
07 - 1 1/2 cups heavy cream.
08 - 2 garlic cloves, minced.
09 - 2 cups freshly grated parmesan cheese (about 8 oz.).
10 - 1/2 cup fresh parsley, chopped, plus more for serving.

# Instructions:

01 - Cook fettuccine according to package directions. Drain but don't rinse.
02 - Heat oil and 2 tablespoons butter, cook shrimp with salt and pepper until pink, 2-2.5 minutes. Remove to plate.
03 - Add cream and remaining butter to pan drippings, cook 2-3 minutes. Add garlic and 1.5 cups parmesan.
04 - Add shrimp and pasta to sauce, coat well. Add parsley and toss.
05 - Top with remaining parmesan and extra parsley, serve from skillet.

# Notes:

01 - Don't rinse pasta to keep starch for sauce.
02 - Serve immediately for best results.
03 - Use freshly grated parmesan for best melting.
