Easy Slow Cooker Beef Sandwich (Print Version)

# Ingredients:

→ Slow Cooker Meat

01 - 4 lb chuck roast, trimmed
02 - 1 large yellow onion, sliced
03 - 1 tsp black pepper, freshly ground
04 - 1 oz au jus gravy mix (1 packet)
05 - 1 oz onion soup mix (1 packet)
06 - 2 tsp Worcestershire sauce
07 - 2 cups beef broth

→ Sandwich Assembly

08 - 8 medium hoagie rolls
09 - 3 tbsp butter, softened
10 - 8 oz provolone cheese, sliced
11 - freshly chopped parsley, for garnish

# Instructions:

01 - Place the sliced onions in the bottom of the slow cooker, then season the chuck roast with black pepper on both sides. Add the roast on top of the onions.
02 - Sprinkle the au jus mix and onion soup mix over the top of the beef.
03 - Mix together the Worcestershire sauce and beef broth and then pour into the slow cooker. Use more beef broth if you want more gravy for dipping at the end.
04 - Cover the slow cooker and cook on LOW heat for 7 to 8 hours, till the beef is really tender and falls apart easily.
05 - Carefully remove the beef from the slow cooker and use a slotted spoon to remove the onions from the bottom and place them in a separate bowl for later use.
06 - Using a fine-mesh strainer, pour the dripping from the slow cooker into a bowl or gravy boat. This is the dipping sauce for the French Dip Sandwiches.
07 - Cut the sandwich rolls open and spread butter (if desired) in the middle and toast until lightly browned. Top with the shredded beef, onions and provolone cheese. Garnish with parsley if desired.
08 - Dip the toasted, warm sandwiches in the dipping sauce and enjoy!

# Notes:

01 - For more dipping sauce, add extra beef broth at the start
02 - Meat can be cooked up to a day ahead
03 - Leftover meat freezes well for future use
