In a large mixing bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan, egg, salt, black pepper, Italian seasoning, and red pepper flakes. Mix thoroughly until well combined but avoid overmixing to prevent tough meatballs.

Take about 2 tbsp of the meat mixture and flatten it in your palm. Place a cube of mozzarella in the center and wrap the meat around it to form a ball. Repeat with the remaining mixture and cheese.

Heat olive oil in a skillet over medium heat. Add the meatballs in batches, searing them on all sides until browned, about 4-5 minutes. Lower the heat, cover, and cook for another 5 minutes until fully cooked. Alternatively, bake at 190°C for 18-20 minutes.

In the same pan, melt butter and sauté garlic until fragrant. Add broth, red pepper flakes, and parsley. Simmer for 2-3 minutes. Finish with lemon juice or white wine for extra flavor.
