Strawberry Cookies (Print Version)

# Ingredients:

01 - 1 1/4 cups all-purpose flour.
02 - 1/2 teaspoon baking powder.
03 - 1/8 teaspoon salt.
04 - 1/4 cup unsalted butter, softened.
05 - 4 oz cream cheese, softened.
06 - 3/4 cup sugar.
07 - 1 egg.
08 - 1 teaspoon vanilla extract.
09 - 3/4 cup fresh strawberries, chopped.
10 - 2 tablespoons lemon juice.
11 - 1-2 tablespoons flour (for berries).
12 - 5 oz white chocolate, chopped.
13 - Sanding sugar (optional).

# Instructions:

01 - Heat oven to 350°F. Line baking pans. Toss strawberries with lemon juice. Drain after few minutes.
02 - Whisk flour, baking powder, salt.
03 - Beat butter, cream cheese, sugar until fluffy. Add egg, vanilla. Mix in dry ingredients. Fold in white chocolate.
04 - Coat drained strawberries with flour. Fold gently into dough.
05 - Drop by tablespoons. Chill 5-10 minutes. Add sanding sugar if using. Bake 13-15 minutes until golden. Cool on wire racks.

01 - Use fresh berries only.
02 - Keep refrigerated.
03 - Dough should be cold.
04 - Can make gluten-free.
05 - Don't skip chilling step.
06 - Best eaten within 3 days.
