One-Pan Stuffed Pepper Skillet (Print Version)

# Ingredients:

→ Meat & Vegetables

01 - 1 pound ground beef
02 - 1/2 onion, diced
03 - 3 cloves garlic, minced
04 - 1/2 cup green bell pepper
05 - 1/2 cup red bell pepper

→ Base & Liquids

06 - 3/4 cups white rice (Jasmine preferred)
07 - 14.5 oz diced tomatoes
08 - 2 cups beef broth
09 - 2 tablespoons tomato paste

→ Seasonings & Toppings

10 - 1 teaspoon Italian seasoning
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon black pepper
13 - 1 1/2 cups cheese
14 - 1 tablespoon parsley

# Instructions:

01 - Brown ground beef with onion and garlic over medium heat until fully cooked and crumbled. Drain fat.
02 - Add bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt and pepper. Stir and bring to boil.
03 - Reduce heat, cover and simmer for 18 minutes until rice is cooked.
04 - Fluff rice, top with cheese. Cover and let melt over low heat. Garnish with parsley.

# Notes:

01 - Best with uncooked long grain white rice, preferably Jasmine
