Preheat your oven to 400°F (200°C).

Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake them for 45-60 minutes until tender.

While the sweet potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat and add taco seasoning according to the package directions. For the vegetarian option, heat the black beans in a separate pot.

Once the sweet potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create space for the filling.

Fill each sweet potato with the cooked meat (or beans), black beans, corn, diced tomatoes, and shredded cheese.

Place the stuffed sweet potatoes back in the oven for 5-10 minutes until the cheese is melted.

Add a dollop of sour cream or Greek yogurt, sprinkle with chopped cilantro, and garnish with avocado slices if desired before serving.
