Taco Stuffed Sweet Potatoes (Print Version)

# Ingredients:

01 - 2 large sweet potatoes
02 - 1 pound ground beef or turkey
03 - 1 packet taco seasoning
04 - 1 cup black beans, drained and rinsed
05 - 1 cup corn
06 - 1 cup diced tomatoes
07 - 1 cup shredded cheese
08 - Sour cream or Greek yogurt, for topping
09 - Chopped cilantro, for garnish
10 - Avocado slices, optional

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake them for 45-60 minutes until tender.
03 - While the sweet potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat and add taco seasoning according to the package directions. For the vegetarian option, heat the black beans in a separate pot.
04 - Once the sweet potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create space for the filling.
05 - Fill each sweet potato with the cooked meat (or beans), black beans, corn, diced tomatoes, and shredded cheese.
06 - Place the stuffed sweet potatoes back in the oven for 5-10 minutes until the cheese is melted.
07 - Add a dollop of sour cream or Greek yogurt, sprinkle with chopped cilantro, and garnish with avocado slices if desired before serving.
