Hearty Meatball Soup (Print Version)

# Ingredients:

01 - 24 turkey meatballs.
02 - 1 tablespoon olive oil.
03 - 1 medium onion, diced.
04 - 1 medium carrot, diced.
05 - 2-3 celery stalks, diced.
06 - 2 garlic cloves, diced.
07 - 1 tablespoon Italian seasoning.
08 - 1/4 teaspoon chili flakes.
09 - 2 tablespoons tomato paste.
10 - 300ml tomato sauce.
11 - 1.25 liters chicken stock.
12 - 150g orzo.
13 - 75g baby spinach.
14 - 100ml half and half cream.
15 - 30g Parmesan, grated.
16 - Salt and black pepper.

# Instructions:

01 - Heat oil in large pot. Cook onion, carrot, and celery 7-8 minutes until soft.
02 - Add garlic, Italian seasoning, and chili flakes. Cook 1 minute.
03 - Stir in tomato paste and sauce, then add stock and orzo.
04 - Boil, then lower heat. Simmer 10 minutes, stirring often to prevent sticking.
05 - Add meatballs and spinach when orzo is done. Cover and cook 1-2 minutes.
06 - Pour in cream and Parmesan. Season to taste.
07 - Serve hot with extra Parmesan if wanted.

01 - Meatballs can be made ahead.
02 - Great for freezing without pasta.
03 - Can use any small pasta shape.
