Loaded Veggie Mac and Cheese (Print Version)

# Ingredients:

→ Base

01 - 2 (20 oz) packages Bob Evans White Cheddar Macaroni and Cheese
02 - 4 strips thick cut bacon, chopped
03 - 2 tablespoons butter

→ Vegetables

04 - 1/2 onion, diced
05 - 1 teaspoon minced garlic
06 - 1 cup broccoli florets, chopped
07 - 1 cup chopped asparagus
08 - 1 cup frozen peas and carrots blend

→ Topping

09 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Preheat oven to 350°F.
02 - Cook bacon in large oven-safe skillet until crisp. Remove to paper towels, leave 1-2 tablespoons grease in pan.
03 - Add butter and melt. Cook onion, garlic, broccoli and asparagus until tender (5-7 minutes). Add frozen vegetables and heat through.
04 - Add macaroni and cheese to skillet and stir. Top with mozzarella and bacon.
05 - Bake 15-20 minutes until heated through and bubbly.
