BBQ Chicken & Slaw Sandwich (Print Version)

# Ingredients:

→ Chicken

01 - 2 cups shredded chicken
02 - 1 1/4 cups homemade BBQ sauce

→ Coleslaw

03 - 1 lime, juiced
04 - 1 tablespoon Greek yogurt
05 - 3 cups coleslaw mix
06 - 1/4 cup chopped cilantro
07 - 1/2 jalapeño, minced (optional)
08 - 1/4 teaspoon salt
09 - 1/4 teaspoon black pepper

→ Assembly

10 - 4 brioche buns, toasted
11 - Sliced dill pickles (optional)

# Instructions:

01 - In a large saucepan, combine shredded chicken and BBQ sauce. Cook over medium low heat, stirring often, until the chicken is well coated in sauce and is warmed through, about 5 minutes. Remove from heat.
02 - Add about a heaping 1/2 cup of chicken to the bottom of each roll. Top with a heaping pile of slaw, and add pickles on top, if desired. Add top roll and serve warm.

# Notes:

01 - BBQ chicken can be stored for up to 4 days in the fridge
02 - Coleslaw will stay crunchy for up to 2 days
03 - Store components separately for best results
