Sweet and Spicy Chicken Tacos (Print Version)

# Ingredients:

→ Taco Seasoning

01 - 1/4 teaspoon cumin
02 - 1/4 teaspoon garlic powder
03 - 1/4 teaspoon onion powder
04 - 1/4 teaspoon chipotle powder
05 - 1/4 teaspoon Mexican oregano
06 - 1/4 teaspoon smoked paprika
07 - 1/4 teaspoon kosher salt
08 - 1/8 teaspoon cayenne

→ For Chicken

09 - 8 oz chicken breast, cut into 1/2-inch cubes
10 - 1 tablespoon avocado oil
11 - 2 chipotles in adobo, finely chopped
12 - 1 tablespoon adobo sauce
13 - 1 tablespoon honey
14 - 1/4 cup finely chopped red onion
15 - 2 cloves garlic, minced

→ For Assembly

16 - 4 soft taco sized tortillas (6-inch)
17 - 1 tablespoon unsalted butter
18 - 1 teaspoon lime juice
19 - 2 tablespoons water

# Instructions:

01 - Combine all taco seasoning ingredients in a bowl. Set aside.
02 - Cut chicken into 1/2-inch cubes, toss with seasoning blend. Let rest 10 minutes at room temperature.
03 - Heat oil in pan over medium heat. Cook chicken about 5 minutes, stirring occasionally.
04 - Mix chipotles, adobo sauce, honey, red onion, and garlic. Add to chicken, cook 3-4 minutes until chicken is done.
05 - Reduce heat to low. Add butter and water, stir until silky sauce forms. Stir in lime juice and turn off heat.
06 - Warm tortillas, fill with chicken and preferred toppings.

# Notes:

01 - Warm tortillas in microwave for 30 seconds or in dry pan
02 - Add your favorite taco toppings like cheese, cilantro, or avocado
03 - Adjust spice level by varying amount of cayenne and chipotle
