Peanut Butter Cookie Bars (Print Version)

01 - 128g creamy peanut butter
02 - 113g unsalted butter, softened
03 - 150g granulated sugar
04 - 165g light brown sugar, packed
05 - 2 large eggs
06 - 1 teaspoon vanilla extract
07 - 281g all-purpose flour
08 - 1 teaspoon baking powder
09 - 1/2 teaspoon fine sea salt

10 - 255g peanut butter chips
11 - 255g semi-sweet chocolate chips

# Instructions:

01 - Preheat oven to 190°C (375°F). Line a 9x13 inch baking pan with parchment paper.
02 - In a large mixing bowl, whisk together the all-purpose flour, baking powder, and sea salt. Set aside.
03 - In another bowl, combine the softened butter and peanut butter, mixing until smooth.
04 - Gradually add the granulated sugar and light brown sugar to the butter mixture, beating until the mixture is light and fluffy.
05 - Add the eggs one at a time into the sugar-butter mixture, followed by the vanilla extract, ensuring each is fully incorporated.
06 - Slowly mix the dry ingredients into the wet mixture. Do not overmix.
07 - Gently fold in the peanut butter chips and semi-sweet chocolate chips until evenly distributed.
08 - Evenly press the cookie dough into the prepared baking pan.
09 - Bake for 25-30 minutes, or until the edges are golden brown, and a toothpick inserted in the center comes out mostly clean.
10 - Allow the cookie bars to cool completely in the pan. Use the parchment paper to lift them out, then cut into squares.
