Easy Ground Beef Pepper Soup (Print Version)

# Ingredients:

→ Proteins & Base

01 - 1/2 pound lean ground beef (80/20 or 90/10)
02 - 1 cup cooked rice (white or brown)
03 - 2 teaspoons olive oil

→ Vegetables

04 - 1 green bell pepper, chopped (stem and seeds removed)
05 - 1/2 yellow onion, finely chopped (about 1/2 cup)
06 - 2 cloves garlic, minced

→ Liquids & Sauces

07 - 1 can (15 oz) tomato sauce
08 - 2 cups beef broth
09 - 1 teaspoon tomato paste

→ Seasonings

10 - 1/2 teaspoon Italian seasoning
11 - 1 tablespoon brown sugar
12 - Salt and freshly cracked black pepper

# Instructions:

01 - Heat oil in medium deep saucepan over medium heat. Cook beef, onion, salt and pepper until beef is browned, breaking into small pieces.
02 - Stir in pepper, seasonings, garlic, brown sugar, and tomato paste. Cook 3-4 minutes until peppers soften.
03 - Add tomato sauce and beef broth. Cover and cook over low heat for 25 minutes.
04 - Uncover, add cooked rice. Cook 10 minutes more. Season to taste and serve hot.

# Notes:

01 - Use 3.5-5 quart pot or dutch oven
02 - Both white or brown rice work well
03 - Lean beef recommended for less grease
